Low Carb Coconut Oatmeal Recipe

If you’ve been following me on Instagram for a while you’ll know I love a warm breakfast on a cold morning. It just sets you up for the day.

This low carb coconut oatmeal is the perfect filling breakfast. It will keep you going through to lunch time without the need to snack in between. You can add in any additional flavourings such as ground mixed spice or nutmeg if you really want to pack in extra flavour!

Equipment Needed

Makes 1 Portion | 540 Calories Per Portion

  • 19g Carbohydrates
  • 43g Fat
  • 16g Protein
  • 9g Fiber

Ingredients

  • 30g Mixed Seeds, ground
  • 35g Dessicated Coconut
  • 1tsp Ground Cinnamon
  • 15g Rolled Oats
  • 305ml Unsweetened Almond Milk
  • 50g 0% Fat Greek Yoghurt

Method

  1. Add all ingredients EXCEPT yoghurt into a saucepan
  2. Heat on a medium heat
  3. Stir regularly to mix all ingredients
  4. When oatmeal has thickened to your liking, transfer to a bowl
  5. Add the yoghurt on top

You can make this the night before and store in the fridge to reheat the next morning. You may need to add a little milk or water to thin it out if it becomes too thick in the fridge overnight.
